I need a lasagna recipe for thursday night?

Im going to make lasagna this week, and I sorta know how I want to do it. But Im not entirely sure. I want to make a lasagna that has the mince simmering for about a day, or a few hours longer than usual. Im thikning of trying it with chicken mince or lamb mince instead of beef mince. I have a thing for doing a bit of experimenting... I know that I want some vegies in it, like carrot, cauliflower, brocoli, and some others. I also want to put kalamata olives in it too. Im not sure what herbs and spices I should put in. What spices go with what meat? Like what should I use if I make it with chicken or lamb? Also, Im not really sure what I should do to make it simmer for ages. I might be in need of a white sauce recipe too... Any tips on making lasagna would be greatly appreciated. Oh and what kind of dessert would be good with the lasagna. Im thinking something light and fruity. But again, Im not sure. Thank you in advance :)
